Peanut Masala Chicken

500 gms Chicken (small pieces / curry cut)
2 medium Onion (finely chopped)
2 Tablespoon Oil
1/4 Teaspoon Salt or as per taste
1/4 Teaspoon Red Chilli Powder
3/4 cup Water (175 ml)
1 Tablespoon Oil (for marination)
1.25 Teaspoon Salt (for marination or as per taste)
1 Teaspoon Red Chilli Powder (for marination)
1/2 Teaspoon Garam Masala Powder
1/2 Tablespoon Ginger Garlic Paste
1/2 Teaspoon Turmeric
1 Tablespoon Curd
2 Sprigs Curry Leaves (for masala powder)
1 Teaspoon Sesame seeds (for masala powder)
1 Teaspoon Coriander seeds (for masala powder)
1/2 Teaspoon Cumin (for masala powder)
1/2 Teaspoon Fennel seeds (for masala powder)
1/2 Teaspoon Pepper (for masala powder)
2 Tablespoon Peanut (for masala powder)

To Chicken, add 1 Tbsp Oil, 1/2 Tsp Garam Masala, 1/2 Tbsp Ginger Garlic paste, 1/2 Tsp turmeric, 1 Tsp Red Chilli, 1.25 Tsp Salt and 1 Tbsp curd.

Mix well. Marinate for half hour.

Heat pan. Add 2 Tbsp peanuts. Roast on low flame till crunchy. Set aside to cool, and peel skins.

In same pan, add 1 Tsp Coriander seeds, 1/2 Tsp Cumin seeds, 1/2 Tsp Fennel seeds, 1/2 Tsp Pepper, 1 Tsp Sesame seeds and 2 sprigs Curry leaves.

Fry on low flame for 2 minutes or till aromatic and curry leaves turn crisp. Set aside to cool.

Add peeled roasted peanuts and other masala ingredients to blender. Crush to fine powder.

Heat 2 Tbsp oil in pan, add 2 medium finely chopped onions. Saute on low flame till brown.

Add marinated chicken. Mix well. Cover and cook for 10 mins on low flame. Stir occasionally.

Add 175 ml water. Mix well. Cover and cook for 10 mins on low flame. Stir occasionally.

Add ground masala powder, 1/4 Tsp Red chilli powder, 1/4 Tsp Salt. Mix well. Cover and cook for 10 mins on low flame. Stir occasionally.
