Egg Pulusu

2 onions
3 tomatoes

2 diced onions

curry leaves
1/2 teaspoon turmeric
1 teaspoon ginger-garlic paste
2 teaspoons chilli powder
1 teaspoon coriander seed powder
1/4 teaspoon cumin-fenugreek seed powder
1 cup water
1/4 teaspoon garam masala

Grind pieces of 2 onions, 3 tomatoes and tamarind into a paste.

Boil and peel eggs. Make small cuts as shown.

To a pan add oil and heat it. Fry the prepared eggs in it and take them into a plate.

Add 2 tablespoons oil to the same pan and heat it.

Add 1/2 teaspoon cumin seeds and fry.

Add 2 diced onions and fry.

Add chopped green chillies, 1 teaspoon salt.

Add curry leaves, 1/2 teaspoon turmeric, 1 teaspoon ginger-garlic paste and fry.

Add previously prepared onion-tomato paste and fry.

Add 2 teaspoons chilli powder, 1 teaspoon coriander seed powder, 1/4 teaspoon cumin-fenugreek seed powder, 1 teaspoon salt, 1 cup water and mix.

Add the prepared eggs into the curry and simmer for 5-10 minutes.

Add 1/4 teaspoon garam masala, coriander leaves and mix.
