Egg Pulusu

4 boiled eggs
1 cup tamarind juice
2 teaspoons spices
2 cups steam rice

Boil the eggs in water for about 10 minutes until hard-boiled. Peel and set aside.

In a pan, heat oil over medium heat. Add mustard seeds and cumin seeds, and let them splutter.

Add chopped onions and sauté until they turn translucent.

Add chopped tomatoes and cook until they soften.

Stir in turmeric powder, red chili powder, and salt. Mix well.

Pour in the tamarind water and bring to a boil. Let it simmer for about 5 minutes.

Add the boiled eggs to the tamarind mixture, gently coating them with the sauce.

Add slit green chilies and chopped cilantro. Cook for another 2-3 minutes.

Remove from heat and let it sit for a few minutes to absorb flavors.
