Instructions

  1. 1Boil the eggs in water for about 10 minutes until hard-boiled. Peel and set aside.
  2. 2In a pan, heat oil over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
  3. 3Add chopped onions and sauté until they turn translucent.
  4. 4Add chopped tomatoes and cook until they soften.
  5. 5Stir in turmeric powder, red chili powder, and salt. Mix well.
  6. 6Pour in the tamarind water and bring to a boil. Let it simmer for about 5 minutes.
  7. 7Add the boiled eggs to the tamarind mixture, gently coating them with the sauce.
  8. 8Add slit green chilies and chopped cilantro. Cook for another 2-3 minutes.
  9. 9Remove from heat and let it sit for a few minutes to absorb flavors.
