Egg Pulusu

6 eggs, boiled and peeled
20 gms tamarind, soaked
2 onions, chopped
2 tomatoes, diced
1 1/2 tbsp oil
2 green chilies, slit
2 sprigs curry leaves
1/2 tsp turmeric powder
1 tsp ginger garlic paste
1 1/2 tsp salt
1 1/2 tsp chili powder
1 tsp coriander powder
1/2 tsp cumin-fenugreek seeds powder
1/3 tsp garam masala powder
coriander leaves for garnish

Boil and peel 6 eggs. Soak 20 gms of tamarind in water and set aside.

To a mixie jar, add 2 chopped onions, 2 diced tomatoes, and soaked tamarind. Grind into a smooth paste.

Heat 1 1/2 tbsp of oil in a pan. Slit the eggs and fry them until they turn brown. Remove and set aside.

In the same pan, add the prepared paste and cook for 4-5 minutes until the oil starts to float and the gravy thickens.

Add 2 slit green chilies, 2 sprigs of curry leaves, and stir. Then, add 1/2 tsp turmeric powder and 1 tsp ginger garlic paste, and fry for a minute.

Season with 1 1/2 tsp salt, 1 1/2 tsp chili powder, 1 tsp coriander powder, and 1/2 tsp cumin-fenugreek seeds powder. Stir everything together.

Add water as needed for the gravy, close the lid, and cook for 2 minutes.

Add the fried eggs and mix them gently. Cook for another 2 minutes.

Add 1/3 tsp garam masala powder, garnish with fresh coriander leaves, and turn off the stove.
