1 g citric acid (salt of lemon)

Prepare a pot (copper with steel inside) for melting sugar.

Add 1 liter of water and 1 kilo of sugar to the pot and place it on high heat to melt the sugar.

While the sugar is melting, mix 200 g of starch with 200 mL of water until smooth.

Once the sugar is boiling and clear, add 4 g of cream of tartar and 1 g of citric acid to the pot.

Take the boiling syrup off the heat and slowly pour it into the starch mixture while whisking to avoid clumping.

Return the mixture to medium heat and continuously stir in one direction to prevent sticking.

Monitor the mixture for three signs of readiness: it should fall in a heavy lump, sugar should not dissolve on top, and it should hold shape when placed in water.

If desired, add pistachios or rose water before the mixture thickens.

Pour the mixture into a tray dusted with wheat starch and shape it with wet hands.

Dust the top with more starch and let it cool completely before separating it from the tray.

Let the Turkish delight sit overnight to thicken further.

Cut the Turkish delight with a long knife dusted with starch and powdered sugar to prevent sticking.

Dust the sides of the cut pieces with more powdered sugar for coating.
