Put 4 cups of sugar into a large saucepan.

Add 400 milliliters of water and 2 tablespoons of fresh lemon juice to the saucepan and mix.

Bring the mixture to a boil and heat it to the softball stage (around 235 degrees Fahrenheit or 112 degrees Celsius).

Once at the softball stage, turn off the heat and set it aside.

In a large pot, add 1 cup of cornstarch, 1 teaspoon of cream of tartar, and 3 cups of water.

Mix well with a whisk to remove any lumps.

Place the pot on medium heat and mix continuously until it becomes a thick paste.

Slowly add the sugar mixture to the cornstarch mixture while mixing to ensure a smooth mixture.

Cook on low heat for around 35 to 45 minutes until it reaches a light golden color and is very thick.

Turn off the heat and add 1 teaspoon of orange blossom water and 2-3 drops of pink food color, mixing well.

Line an 8-inch square baking pan with parchment paper and grease it generously with oil.

Pour the mixture into the pan and flatten it with a greased spatula.

Leave the pan out on the counter overnight, covered with a sheet of kitchen roll.

The next day, make the sugar coating by combining 1/2 cup of icing sugar and 1/4 cup of cornstarch.

Dust the work surface with the sugar mixture, invert the turkish delight onto the board, and remove the parchment paper.

Top the turkish delight with the sugar mixture and cut into smaller squares using a greased knife.

Toss the squares into the sugar mixture to coat completely and set aside on a plate for storage.
