Combine warm milk, evaporated milk, yeast, and 1 tablespoon of sugar in a bowl and whisk. Set aside for about 10 minutes.
In a stand mixer bowl, add bread flour, sugar, salt, eggs, and the yeast mixture.
Mix everything together using the hook attachment until the dough begins to form.
Add softened butter and mix for 8 minutes or until the dough becomes smooth and elastic.
Place the dough in a bowl, cover with a kitchen towel or plastic wrap, and let it rise in a warm place for about an hour.
After the dough has risen, punch it down, reshape it, cover, and let it rise again for another hour.
Place the dough on a well-floured surface, dust the top with more flour, and flatten it out to about 3/4 inches thick using a rolling pin.
Cut the dough into oval shapes and place them on a baking sheet, cover, and let rise for 30 minutes.
Pour about 2 inches of vegetable oil in a pot and heat it to 360 to 375 degrees Fahrenheit.
Fry each side of the donut for a few minutes or until golden brown, flipping to fry both sides.
Transfer the fried donuts to a baking sheet lined with a wire rack or paper towels and let cool before rolling in sugar.
To fill the malasada, poke with a chopstick to create a cavity, fill with your choice of filling using a pastry bag, and stuff until firm and plump.
