1 tbsp sugar
500 g flour
1 tsp salt

Mix the warm water with the yeast and sugar. Rest for 5 minutes.

Add the flour and salt. Mix together and then knead to get an elastic dough.

Allow to rise for 30 minutes.

Add oil on your work surface. Oil your hands, then roll the dough into a baguette shape.

Slice it up into 60 g pieces. Shape them into balls.

Keeping your hands oiled, roll each ball into a baguette. To shape the pretzels, take each baguette and stretch it, to make it thin and long.

Shape into rings and place them onto a lined baking tray. Allow to rest for 10 minutes.

In the meantime, bring the hot water to boil. When the water is boiling, add the bicarbonate of soda.

Add the pretzels in the water and boil for 30 seconds on each side. Remove them and transfer back onto the baking tray.

Sprinkle salt and sesame seeds on each. Preheat the oven to 250℃. Bake the pretzels in the oven for 10 minutes, or until golden brown.
