Divide the dough into equal pieces and roll each into a long rope.
Shape each rope into a pretzel form and place on the prepared baking sheets.
Prepare a baking soda solution by dissolving baking soda in boiling water.
Dip each pretzel into the baking soda solution for 30 seconds and return to the baking sheet.
Brush each pretzel with egg wash and sprinkle with coarse salt and seeds.
Bake for 12-15 minutes until golden brown.
Remove from oven and let cool slightly before serving.
