Soak 60g raisins in rum for at least 30 minutes.

Make the spiced sugar by whisking together 80g sugar, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 1/4 teaspoon salt.

Melt 60g unsalted butter in a pan and toast 60g breadcrumbs until golden brown, then remove from heat and let cool.

Blitz 30g walnuts and 30g hazelnuts in a food processor until crumbly but not too fine.

Peel 5 Granny Smith apples and cut them into thin slices.

Transfer the sliced apples into a bowl, add zest of 1/2 lemon and 2 tablespoons lemon juice.

Add the spiced sugar and mix gently to not damage the apples.

Drain the rum raisins and mix with the apples.

Lay 1 sheet of filo on a large piece of plastic wrap and gently brush melted unsalted butter on it.

Lay another sheet of filo on and brush with melted butter. Repeat until you have 5 layers.

Sprinkle toasted breadcrumbs and nuts over the dough.

Add apple filling in the middle, leaving some space on the sides.

Fold the sides and brush melted butter on top of them.

Then fold the top and bottom, brushing more melted butter to help them stick together if needed.

Flip strudel on a baking tray lined with parchment paper (seam side on the bottom) and brush melted butter all over.

Bake in a preheated 375F (190C) oven for 30 minutes.

At the 15th minute mark, turn the baking tray and brush more melted butter on the strudel.

Once done, remove strudel from the oven and let cool.

For the whipped cream, add 250g heavy whipping cream, 1g xanthan gum, 1 tablespoon icing sugar, and 1 teaspoon vanilla extract to a cup and blitz with a hand blender to help dissolve the xanthan.

Continue whisking until stiff peaks and keep cool in the fridge.

To serve, slice apple strudel, put on a plate and dust with icing sugar. Put whipped cream on the side.
