Boil 2 liters of water with shrimp heads and shells for 10 minutes to create a broth.
Season the cleaned shrimp with salt and set aside.
Blend the shrimp heads and shells with the broth to extract flavor.
In a large pot, sauté chopped red onion, bell pepper, garlic, and oregano with cumin, pepper, salt, and achiote for about 6-7 minutes until fragrant.
Reserve some sautéed mixture to form small green plantain meatballs.
Add the first group of vegetables: yuca and hard corn to the pot, and boil for 10-15 minutes with the shrimp broth.
Peel two green plantains; slice one and grate the other.
Mix grated plantain with a tablespoon of peanuts and salt, then combine with the sautéed mixture.
Form small meatballs from the plantain mixture, wetting hands with water to prevent sticking.
Once the first group of vegetables is tender, add the second group: green plantain, carrots, and sweet potato, cooking for another 10 minutes.
Add the third group of vegetables: ripe plantain and other greens, and blend peanuts with water to create a peanut mixture.
After 20-25 minutes of boiling, add the blended peanut mixture and the third group of vegetables to the pot, cooking for an additional 5-7 minutes.
Check the salt level and adjust if necessary before adding the shrimp, cooking for only 3 minutes to avoid overcooking.
Chop fresh cilantro and add it to the soup just before serving.
Serve the soup with avocado, lime, and hot sauce.
