Mango Shrimp Ceviche

1 pound raw shrimp, peeled and deveined
10 limes
1 teaspoon salt
1 teaspoon pepper
1 English cucumber
4 Roma tomatoes
1 jalapeno pepper
1/2 red onion, diced
1 mango, diced
a bunch of cilantro, chopped

Juice 10 limes using a juicer or by hand, set aside.

Cut 1 pound of raw shrimp into bite-sized pieces and place in an even layer.

Pour lime juice over the shrimp, ensuring it covers all the shrimp.

Add 1 teaspoon of salt and 1 teaspoon of pepper to the shrimp and lime juice, then mix well.

Cover the shrimp mixture and refrigerate for 30 minutes to let the lime juice 'cook' the shrimp.

Prepare the vegetables: scoop out the insides of 1 English cucumber and gut 4 Roma tomatoes, removing seeds and gummy bits.

Dice the mango and set aside.

After 30 minutes, check that the shrimp is opaque and pink in color.

Add 1 diced jalapeno pepper, the prepared tomatoes, cucumber, 1/2 diced red onion, diced mango, and a bunch of chopped cilantro to the shrimp mixture.
