Start by boiling hot water for the noodles.
Add 8 oz of Lade noodles to the hot water and let them cook until al dente.
Prepare the sauce by mixing beef stock, hoisin sauce, low sodium soy sauce, 75% of the chopped ginger, 75% of the chopped garlic, and brown sugar in a bowl. Dissolve cornstarch in the mixture and scrape the bottom to ensure the brown sugar dissolves.
Heat the griddle with two burners on low and two on medium-high heat.
Add a little oil to the griddle and sear the ground beef without touching it to allow for a good sear.
Once the ground beef is cooked through, add the white parts of the green onions and some black pepper to the beef.
Move the beef off to one side of the griddle, leaving the residual oil and bits behind.
Add a little more oil if desired, then add the cooked noodles to the griddle to char them slightly for extra texture.
Add the remaining garlic and ginger to the noodles, stirring quickly to avoid burning.
Pour the prepared sauce over the noodles and beef, mixing everything together while ensuring the heat remains high to maintain temperature.
Add the green onion tops and mix well until everything is combined and heated through.
