Heat oil in a saucepan until hot.
Add chopped onion, pimento, and garlic to the oil with a little salt; sauté for 1-2 minutes until tender and fragrant.
Set the sautéed aromatics aside to cool.
Boil potatoes in salted water until tender; mash until smooth.
Mix mashed potatoes with jira and the sautéed aromatics; taste and adjust salt as needed.
In a bowl, combine 1 cup paleo baking flour, 1.5 cups gluten-free all-purpose flour, yeast, and salt; mix well.
Gradually add water to the flour mixture until it comes together into a soft dough; knead for about 2 minutes.
Drizzle a little oil on the dough ball and let it rest for 10 minutes.
Use a large Ziploc bag; oil one half and press a 3-inch ball of dough onto the oiled side.
Cover with the other half of the plastic and smooth out to about 1/4 inch thickness.
Add potato filling to the center, fold over, and press down on the edges to seal.
Cut excess dough with a round cover for a clean edge; place on a wire rack.
Repeat until all pies are made; spritz with cooking spray.
Air fry at 400°F for 35 minutes until golden and crispy.
