2 pounds large shrimp frozen or fresh (peeled and deveined)
1/2 cup sliced red onion
1/2 cup chopped fresh cilantro or parsley
1 garlic clove minced
1/2 cup fresh lime juice
1 cup ketchup
1/2 teaspoon hot sauce (tabasco or your favorite)
1 tablespoon olive oil
Salt and pepper to taste
Lettuce leaves and Saltine crackers for serving

In a bowl, combine the shrimp and lime juice. Make sure the shrimp is fully submerged in the juice.

Cover the bowl and refrigerate for about 30 minutes, allowing the shrimp to 'cook' in the lime juice.

After 30 minutes, check the shrimp; they should be opaque and pink.

Add the diced tomatoes, red onion, cilantro, jalapeño, salt, and black pepper to the shrimp.

Gently mix all the ingredients until well combined.

If using, fold in the diced avocado carefully to avoid mashing it.

Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.
