1.5 cups white jasmine rice
1 can (13.5 oz) light coconut milk
2 cups chicken broth
1 can (15 oz) red kidney beans
2 bay leaves
1 teaspoon sea salt
1/2 teaspoon pepper
1/4 cup parsley or cilantro
1 lime

Start by heating a skillet on medium-high heat.

Spray the skillet with a little oil.

Add shrimp to the skillet and sear until a nice deep rich color is achieved.

If using, sprinkle blackened seasoning over the shrimp while cooking.

Remove the shrimp from the heat once seared and set aside.
