Peel and slice ripe bananas lengthwise.
Cut jackfruit into thin strips if using.
Prepare spring roll wrappers on a clean surface.
Place a slice of banana and a few strips of jackfruit on each wrapper.
Sprinkle brown sugar over the filling.
Fold the sides of the wrapper over the filling, then roll tightly from the bottom up.
Seal the edge with a dab of water.
Heat cooking oil in a deep pan over medium heat until shimmering.
Carefully add the wrapped turon to the hot oil, seam side down.
Fry until golden brown and crispy, about 3-4 minutes per side.
Remove from oil and drain on paper towels.
Sprinkle additional brown sugar over the hot turon for extra sweetness.
Serve warm and enjoy.
