Peel the baking potatoes.
Place the potato in a large serving spoon to prevent slicing all the way through.
Slice the potato into thin slices, about a quarter of an inch apart, without cutting all the way through.
Gently encourage the potato slices to fan open before baking.
In a bowl, mash together 1 stick of butter with 1 teaspoon each of fresh thyme and fresh rosemary to create a compound butter.
Rub the compound butter all over the potatoes, making sure to get it in between the slices.
Salt the potatoes after buttering them.
Place the potatoes in the oven and bake for about 45 minutes to an hour, until they are toasty brown.
