1

Preheat the oven to 400°F (200°C).

2

Wash the russett potatoes thoroughly.

3

Place two wooden spoons on either side of a potato to prevent cutting all the way through.

4

Slice the potatoes crosswise at intervals, stopping before cutting through the bottom.

5

Place the potatoes on a parchment-lined baking sheet.

6

Chop about 1 teaspoon of fresh thyme.

7

In a bowl, mix 3-4 tablespoons of melted butter, a few tablespoons of avocado oil, and 1/2 teaspoon of garlic powder; whisk together.

8

Open the potatoes slightly and drizzle some of the butter mixture inside the cuts.

9

Brush the remaining butter mixture over the outside of the potatoes using a pastry brush.

10

Lightly salt the potatoes, turning them over to salt the underside as well.

11

Add a little black pepper to the potatoes.

12

Bake the potatoes in the preheated oven for 40-45 minutes until crispy on the outside and fork tender.

13

Remove the potatoes from the oven and fill the cracks with cheese.

14

Return the potatoes to the oven for a few minutes to melt the cheese.

15

Top the baked potatoes with a dollop of sour cream, bacon bits, and chives or green onions.
