Guyanese Pepperpot

4 pounds bone-in beef cut into large cubes
3 small onions
6 cloves of garlic
3 cinnamon sticks
couple sprigs of thyme
4 weary peppers
2 tablespoons brown sugar
100% pure cashew rib
2 teaspoons salt
3 tablespoons green seasoning
1 teaspoon black pepper

Add a little bit of water, onion, and garlic to the blender and blend together.

Add 2 teaspoons of salt, 1 teaspoon of black pepper, 3 tablespoons of green seasoning, thyme, and the onion and garlic puree to the blender and mix together.

Let the mixture marinate for a couple of hours.

Use the plate test method to determine the amount of cashew rib needed by adding a little liquid to a plate and checking the color.

Set the Instant Pot to high sauté mode and let it heat up for about 1-2 minutes.

Add the beef to the pot and cook uncovered, stirring occasionally, for about 10-15 minutes until the liquid dries out and the beef fries up.

Add 2 tablespoons of brown sugar and the cinnamon sticks to the pot and let it cook.

Add the cashew rib to the pot and mix until you achieve a dark rich color.

Take a spoonful of the liquid and place it on the plate to check the color, adding more cashew rib as needed to darken it.

Once the desired color is achieved, add the 4 weary peppers to the pot.

Put the lid on the Instant Pot and set it to pressure cook for 15 minutes.

After pressure cooking, let the pot cool down for about 5-10 minutes.

Taste for tenderness of the beef; if needed, pressure cook for an additional 5 minutes.
