Guyanese Pepperpot

1 teaspoon cloves
1 teaspoon cinnamon
2 teaspoons salt
1 teaspoon black pepper
1/2 cup brown sugar
1 tablespoon orange peel
4 cloves garlic
1/4 cup fresh thyme
2 wiri wiri peppers
2 scotch bonnet peppers
1/2 cup cassareep
4 cups water
3 cups flour
1/4 cup cane sugar
2 teaspoons yeast
2 tablespoons olive oil
2 tablespoons Crisco
1 tablespoon grated orange peel

Season the goat meat, cow heel, ribs, and bones with cloves, cinnamon, salt, black pepper, brown sugar, orange peel, and garlic.

Add fresh thyme and wiri wiri peppers to the meat mixture.

Mix all the ingredients well and let them marinate for about an hour or overnight for better flavor.

Prepare the cooking pot and place the marinated meat inside without adding water.

Cook the meat on low heat for several hours, covering the pot to retain moisture.

After some time, check the meat and add water to the pot to continue cooking.

Adjust the color and flavor by adding more cassareep if desired.

Prepare the regular bread by mixing flour, cane sugar, salt, yeast, and olive oil in a bowl.

For the pepper pot bread, mix the remaining flour with cinnamon, wiri wiri peppers, fresh thyme, and extra sugar.
