1 lb cow face
1 lb cow heel
1 lb cow rib
4 cloves garlic
1 tablespoon ginger
1 tablespoon salt
2 teaspoons fine thyme
2 scotch bonnet peppers
1 tablespoon five spice
1 teaspoon cloves
1 teaspoon cinnamon
1 orange peel
1 cup cassava cassareep

Wash and prepare the meat (beef, cow face, cow heel, cow rib).

Season the meat with salt, garlic, and ginger, then mix well and set aside to marinate.

In a pot over medium heat, add the seasoned meat without any oil or water to cook down and evaporate the rank taste.

Cover the pot and let the water evaporate until only oil remains at the bottom.

Repeat the same process for the beef in a separate pot.

Once the meat is cooked down with no liquid, combine all the meats in one pot.

Add five spice, cloves, cinnamon, orange peels, and hot peppers to the pot.

Pour a generous amount of cassava cassareep into the pot for color and flavor.

Prepare a kettle with boiling water and add it to the pot to aid the cooking process.

Cover the pot and let it boil for 1 hour today, then again for 1 hour tomorrow, and on Christmas morning for the final boil before serving.
