Put oxtail in the pot.

Add 1 whole jar of casarib to the pot.

Let the mixture sit and boil, scraping the top until it’s gone.

Cover and let it cook for about 3 hours on medium heat.

After 3 hours, remove excess grind from the top of the pot.

Let the pepper pot sit overnight on the stove.

In the morning, heat it back up on the stove before serving.
