Chop onions, garlic, and fresh thyme.

Combine chopped onions, garlic, thyme, and 1/3 cup cassareep with the meat (beef, pork, oxtail) and stir to coat.

Set the marinated meat aside.

Soak clean cow foot in vinegar water for 30 minutes, rinse, then pressure cook for 15-20 minutes until tender.

Boil salt beef in a small pot for 12-15 minutes to remove excess salt.

In a large pot, add the seasoned meat and cook in its own juices until they evaporate.

Add the pre-cooked salt beef and cow foot to the pot.

Add orange peel, cinnamon stick, cloves, and wiri wiri peppers.

Pour in enough water to cover all the meats and bring to a boil.

Reduce heat, cover, and cook for 2.5 to 3 hours until meats are tender and sauce thickens.

Add sugar and salt to taste towards the end of cooking.
