Wash the cow heel under running water, scraping off any unwanted bits.

Wash the cow heel a second time, then soak it in a mixture of 2.5 limes and vinegar for a few minutes.

Wash the oxtail one by one, using lemon and vinegar for cleaning, and soak for 20 minutes before the final wash.

Boil the cow heel in hot water, then discard the water and wash the cow heel again.

Add fresh water to the pot and bring it to a boil, then add the cow heel back into the pot.

Once the water starts frothing, discard the water again and wash the cow heel again.

Add cold water back into the pot and add 5 chicken stock cubes, fresh thyme, turmeric, blended seasoning, and cloves.

Add the oxtail and beef to the pot, along with more fresh thyme, black pepper, and all-purpose seasoning.

Add 2 wiri wiri peppers to the pot and cover everything with water, then bring it back to a boil.

Let the mixture boil until the meat is tender, checking for seasoning as it cooks.

After boiling for an hour, check the tenderness of the meat and remove any bones from the cow heel.

Let the mixture boil down for another hour, then check again for tenderness and seasoning.
