3 cinnamon sticks
5 wiri wiri peppers
ginger

Start by pressure cooking the cow heel for about 15 to 20 minutes.

Boil the beef for about an hour.

Season the boiled beef with garlic, ginger, thyme, and 1/2 cup of cassareep.

Add two pieces of pork to the seasoned beef.

Mix the beef and pork with the cassareep.

In a large pot, add oil and transfer the beef and pork mixture into it.

Add the remaining ingredients: 3 cinnamon sticks, 5 wiri wiri peppers, 2 tablespoons of sugar, 1 teaspoon of salt, thyme, and orange peel.

Mix everything together.

Strain the cow heel and add it to the pot with the meats.

Add another 1/2 cup of cassareep to the pot.

Add water to cover the meat and mix everything together.

Add cloves to the pot.

Cover and let it boil for about 1 to 1.5 hours, checking periodically.

After an hour, taste and adjust seasoning with a quarter teaspoon of salt if needed.

Let it cook for another half an hour.
