Rwandan Roasted Pork Ribs

Preheat the oven to 180ยฐC (350ยฐF).
Rub the pork ribs with minced garlic, grated ginger, and chopped onion.
Mix soy sauce, honey, vinegar, black pepper, paprika, cumin, thyme, and bay leaves in a bowl.
Coat the ribs with the marinade and let them sit for at least 30 minutes.
Heat vegetable oil in a large skillet over medium-high heat.
Sear the ribs on both sides until browned, about 3-4 minutes per side.
Place the ribs in a roasting pan and pour the remaining marinade over them.
Cover the pan with aluminum foil and roast in the oven for 1 hour.
Remove the foil and continue roasting for another 30 minutes until the ribs are tender and caramelized.
Baste the ribs with the pan juices every 10 minutes during the last 30 minutes of roasting.
Remove from the oven and let rest for 10 minutes before slicing.
Drizzle with lime juice and garnish with fresh cilantro before serving.
