Spray the pan and preheat the oven to 350°F.
Cut the bacon into 1/4 inch pieces and fry it in a pan until crispy, saving the bacon grease.
Pat the fish fillets dry with paper towels and season both sides with salt and pepper.
Mix the cooled bacon pieces with Swiss and Gruyere cheese in a bowl.
Remove the stems from the spinach leaves and lay them on top of the fish fillets, covering them.
Top the spinach with the cheese and bacon mixture, making it nice and thick.
Roll the fish fillets starting from the big end towards the tail, flipping the tail over the top and securing with a toothpick.
Place the rolled fish fillets in the pan with the toothpick side down.
Brush the rolls with butter and pour the remaining butter over the top before placing them in the oven.
Bake for about 25 to 30 minutes.
In the last 10 minutes of baking, melt more butter in the pan used for the bacon.
Separate the egg yolks from the egg whites and save the egg whites for later.
Add 4 to 5 egg yolks to a blender along with white wine, lemon juice, dill, and pepper.
Blend on low while slowly pouring in the hot melted butter to avoid scrambling the egg yolks.
Once all the butter is added, blend on high for 2 to 3 seconds to make the hollandaise sauce.
Plate the fish rolls and drizzle the hollandaise sauce over them before serving.
