Cut up 1/2 onion and 1/2 each of green and red bell pepper.
Chop 2 sticks of green onion, parsley, and cilantro, cutting stems from cilantro but not from parsley.
Peel and cut 2 large potatoes into desired sizes, placing them in cold water to cover.
Rinse whole carrots and set aside.
Cut 4 pieces of corn in half.
Pat chicken pieces dry after washing them.
Add about 2 tablespoons of olive oil to a large pot to coat the bottom.
Cook the chopped onions and bell peppers in the pot for about 5 minutes.
Add 2 tablespoons of minced garlic and cook for another 2-3 minutes.
Add 1 teaspoon of tomato paste and break it down in the pot.
Add the chicken and its juices to the pot, sautéing for about 5 minutes on each side.
Add 32 oz of chicken broth and bring to a boil.
Add 4 bay leaves and 2 teaspoons of Better than Bouillon.
Season with 1 teaspoon black pepper, 1 tablespoon lemon pepper, 1 teaspoon cumin, 1 tablespoon onion powder, and 1 tablespoon garlic powder.
Add the corn, potatoes, whole carrots, and green onion to the pot.
If needed, add more chicken broth or water to cover the ingredients.
Add chopped parsley and cilantro to the pot.
Squeeze the juice of 1 lime into the pot.
