Cut the chicken into 4 pieces.
Boil the chicken for about 5-6 minutes to remove excess fat.
Drain the water from the pot and add more water.
Add a large onion to the pot.
Add 1-2 bags of spice balls for flavor.
Add a couple teaspoons of fresh thyme.
Bring the pot back to a boil and let it cook for about 25 minutes.
Season with black pepper and sea salt to taste.
Add vegetables and cook for another 10 minutes until they are done.
Squeeze lime juice into the pot gradually to avoid it being too tart.
