Add oil to a pot and heat it up.
Season chicken and add it to the pot.
Saute the chicken for about 5 to 7 minutes until it starts to render its own juices.
Sprinkle in chicken bouillon.
Add allspice seeds and bay leaves to the pot.
Chop onion, celery, and scotch bonnet pepper, then add them to the pot.
Pour in water until it barely covers the chicken.
Peel and chop fresh potatoes, then add them to the pot.
Cover the pot and let it cook for an additional 30 minutes.
Cut up 2 limes and squeeze the juice just at the end of the cooking process.
Serve with extra lime and a side of Johnny cake.
