Add chopped onions, red and green bell peppers to the pan and sauté.

Add bay leaves and some crushed red pepper.
Add better than bouillon or bouillon cubes as an alternative.
Squeeze lime juice into the pot and add a little vinegar.
Mix everything well.
Add chopped green onion, potatoes, corn, and carrots to the pot.
Add more water if needed for sufficient liquid.
Cover the pot and let it cook for 45 minutes to an hour.
After cooking, add more lime juice and chopped cilantro before serving.
Plate the dish with two big spoons of chicken and some juice.
