This beloved street food showcases marinated meat cooked on a vertical rotisserie, served in pita with fresh vegetables and sauces. Shawarma has become a global sensation, with countless variations emerging, including vegetarian options and different types of meat, making it a favorite for many around the world.

Marinate the meat with garlic, yogurt, cumin, coriander, paprika, turmeric, cinnamon, olive oil, and lemon juice for at least 1 hour or overnight.
Preheat a grill or oven to high heat.
Skewer the marinated meat or place it on a roasting rack.
Grill or roast the meat until cooked through and slightly charred, about 15-20 minutes.
Let the meat rest for a few minutes before slicing it thinly.
Warm the pita bread on the grill or in a pan until soft.
Spread tahini sauce on the pita bread.
Layer the sliced meat on top of the tahini sauce.
Add sliced tomatoes, cucumbers, and onions on top of the meat.
Drizzle with additional tahini sauce if desired.
Wrap the pita around the filling to create a sandwich.
Serve immediately with pickles or fries.
