This beloved street food showcases marinated meat cooked on a vertical rotisserie, served in pita with fresh vegetables and sauces. Shawarma has become a global sensation, with countless variations emerging, including vegetarian options and different types of meat, making it a favorite for many around the world.

Start by discussing the concept of a chicken shawarma sandwich.
Introduce the ingredients needed for the marinade.
Measure and add 1.5 teaspoons of allspice into a bowl.
Add 1/4 teaspoon of cumin to the bowl.
Add 1/4 teaspoon of coriander to the bowl.
Add 1 teaspoon of sumac to the bowl.
Finely mince 4 cloves of garlic and add to the bowl.
Pour in 1/3 cup of olive oil into the bowl.
Mix the marinade ingredients together thoroughly.
Add 1 pound of organic chicken thighs to the marinade.
Season the chicken with 1 teaspoon of salt and black pepper to taste.
Mix the chicken with the marinade using hands to ensure it's well coated.
Marinate the chicken for about 1 hour to overnight.
Preheat the oven to 400°F.
Place the marinated chicken in the oven and bake for about 30 minutes.
Prepare the tahini sauce by adding 1 clove of garlic to a food processor.
Add 2 tablespoons of tahini sauce to the processor.
Pour in 1 tablespoon of olive oil.
Add 2 tablespoons of fresh lemon juice.
Season with salt and pepper to taste and blend until smooth.
Check the chicken after baking; it should look nicely cooked.
Slice the chicken into shawarma strips after baking.
Assemble the shawarma sandwich using flatbreads.
Add sliced chicken to the flatbread.
Top with tomato cucumber salad seasoned with salt, pepper, and olive oil.
Prepare pickled onions by slicing purple onions thinly and marinating them with 1 tablespoon of rice wine vinegar, 1 teaspoon of sumac, and salt overnight.
Add the pickled onions to the sandwich.
Finish with the tahini sauce on top of the sandwich.
