Add 2 teaspoons of ghee into a pan and let it melt.

In a bowl, combine 500 grams of boneless chicken thigh with 1 heaped teaspoon of cumin powder, 1 teaspoon of coriander powder, 1 teaspoon of turmeric, and 1 tablespoon of homemade garam masala. Mix well and marinate in the fridge for at least 30 minutes.

In the same pan, add half of the chopped onion and let it soften.

Add 2 teaspoons of ginger and garlic, 1 teaspoon of cumin powder, 1 teaspoon of coriander powder, 1 teaspoon of turmeric, and salt to taste. Stir well.

Add a can of tinned tomatoes and 2 green chilies sliced in half. Stir and let it cook down, adding a splash of water as needed, for about 10 minutes until the mixture thickens and the ghee separates.

Remove the sauce from heat and let it cool down before blending it in a blender. Pour the blended sauce back into the pan and add a drop of water to thin it out, then turn the heat on underneath.

In a separate pan, add a bit of ghee and the marinated chicken. Cook until the chicken is sealed.

Add 2 green chilies, 1 chopped red pepper, and the remaining onion to the chicken. Stir-fry until everything is well combined and the chicken is sealed.

Transfer the chicken mixture into the sauce and cook for an additional 5 to 7 minutes with the lid on.

Finish by adding roughly chopped fresh coriander before serving.
