1 large onion
1 bell pepper (capsicum)
1 large tomato (pureed)
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
salt (to taste)
coriander leaves (for garnish)
oil (for cooking)

Prepare the ingredients: chop garlic, ginger, and onion, and cut the chicken into small pieces.

Heat a few tablespoons of oil in a pan.

Add 2-4 dried red chilies to the oil.

Add chopped bell pepper and chopped onion to the pan.

Sauté until the onion turns slightly brown, then remove from the pan and set aside.

In the same oil, add chopped onion (not pureed) and sauté until it turns red.

Add chopped garlic and sauté with the onion until fragrant.

Add the chicken pieces to the pan and sauté until they turn white.

Once the chicken is white, add the ginger-garlic paste and mix well.

Add 1 teaspoon of red chili powder, 1 teaspoon of turmeric powder, 1 teaspoon of cumin powder, and 1 teaspoon of coriander powder.

Mix the spices well, adding a little water if needed to prevent burning.

Continue to sauté until the oil separates and the color changes to red.

Add pureed tomato and salt to taste, and sauté until the oil separates again.

Once the mixture is well cooked and the chicken is tender, add the previously sautéed bell pepper and onion back into the pan.

Mix gently on low heat to combine everything without burning.

If a gravy is desired, add a little water at this stage, but it is preferred dry.
