Cut the firm tofu into small pieces.

Heat the pan and add 2 tbsp of cooking oil.

In the same pan, switch on the heat again and add the yellow onions and ginger; stir-fry until the ginger becomes aromatic and soft.

Add the cut tofu to the pan and lower the heat.

Add sesame oil, light soy sauce, oyster sauce, black pepper, Shaoxing wine, red chili, and spring onions to the tofu.

Increase the heat to high and stir everything together.

Add about 1/4 cup of water, cover the lid, and let it simmer for about 2 minutes.

Taste the dish and adjust seasonings if necessary.

Add the previously cooked garlic back into the dish, reserving some for garnishing, and give it a stir.
