Prepare 300 grams of flour and pour it into a bowl for later use.
Pour 200 ml of warm water into a measuring cup, ensuring the temperature does not exceed 45 degrees.
Add 3 grams of yeast, 1 spoon of sugar, and 0.5 spoon of salt to the warm water.
Add 1 spoon of lard and 0.5 spoon of white vinegar to the mixture.
Stir to dissolve all ingredients, then gradually add the flour in small amounts while mixing.
Knead the mixture into a smooth, non-sticky dough and cover it with plastic wrap to rest for 15 minutes.
Prepare a handful of green onions and slice them, then crush a piece of ginger and add it to the green onions.
Soak the green onions and ginger in warm water with a spoonful of salt and set aside.
Chop a piece of pork into small pieces and mince it, then add the soaked onion and ginger water gradually while stirring.
Add 1 spoon of old soy sauce, mix well, and set aside.
Prepare a piece of lotus root, peel it, and chop it into small pieces, then add to the minced meat.
Peel half a carrot, cut it into thin slices, then into strips, and finally into small dices, adding them to the minced meat.
Chop the white part of the green onions and add to the mixture along with 1 spoon of light soy sauce, 1 spoon of oyster sauce, and 1 spoon of chicken essence, mixing well.
After 15 minutes, check the dough; it should have increased in volume and be soft and chewy.
Take the dough out, knead it back to its original state, and roll it into a rectangular shape.
Spread the lotus root minced meat stuffing evenly over the dough.
Roll the dough tightly from one end, cut it in half, and place it in a steamer.
Boil water in the pot and steam the rolls for 10 minutes, then simmer for 2 minutes.
After steaming, check the rolls; they should be soft and springy when pressed.
Preheat an electric pan, add a spoonful of oil, and brush it evenly.
Place the steamed rolls in the pan and cook over low heat until golden brown on both sides.
Cut the cooked rolls into small pieces and serve on a plate.
