Cut pork ribs into 1-inch thick strips between the bones.

Add the blanched ribs, lotus root, and 6 slices of ginger to the pot.

Add 1 teaspoon of white peppercorns and 6 jujube dates.

Bring the mixture to a boil over high heat, then reduce to the lowest heat and simmer for 1.5 hours or until the ribs are tender.
