Originating from the mountainous regions of Georgia, khinkali are traditional dumplings filled with various meats and spices. They are often enjoyed as a communal dish, with diners savoring the juicy filling and broth inside. Khinkali reflect the rich culinary heritage of Georgia and have gained popularity beyond its borders, inspiring variations worldwide.

Ground turkey is leaner, while ground pork is often less expensive.

Mix flour and salt in a bowl.
Gradually add water while kneading until a smooth dough forms.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Finely chop onion and garlic, then sauté in oil until translucent.
Combine ground beef, sautéed onion and garlic, black pepper, coriander, cumin, and parsley in a bowl.
Knead the rested dough on a floured surface until smooth.
Divide the dough into small balls and roll each into a thin circle.
Place a spoonful of filling in the center of each dough circle.
Fold the dough over the filling to create pleats, pinching to seal.
Bring a large pot of salted water to a boil.
Add the khinkali to boiling water and cook until they float, about 5-7 minutes.
Remove with a slotted spoon and let drain briefly.
Serve hot with a sprinkle of black pepper and a side of vinegar.
