1½ kg chicken
½ cup plain yoghurt
1½ tsp garlic paste
1½ tsp ginger paste
1½ tsp coriander
½ tsp cumin
2 tsp kashmiri red chili
1½ tsp salt
½ cup cooking oil
3 small bay leaves
½ tsp pepper
6 cloves
2 small cinnamon sticks
2 black cardamom
6 cardamom
½ cup sliced onion
¼ cup onion paste
¼ tsp nutmeg powder
¼ tsp mace
1 cup hot water
2 tbsp cashew paste
4-5 aloo bukhara/ dried plum
1 tbsp raisins
fried onion paste
4-5 green chili
1 tbsp ghee
1 tsp kewra water

Firstly, in a bowl add in the chicken, followed by plain yoghurt, garlic paste and ginger paste.

Then, add in garlic paste, ginger paste, coriander, cumin, red chili powder and salt.

Use your hand to mix all the ingredients together and then place a cover on top of the bowl - leave aside to let it marinate for 30 minutes.

In a separate pan, add in cooking oil, bay leaves, pepper, cloves, cinnamon sticks, black cardamom and cardamom - mix around using spatula.

After stirring, put in the sliced onions and fry until brown.

Then, add in onion paste whilst continuously mixing. The consistency of the mixture should now be a lot smoother after all the stirring.

After this, add the previously marinated chicken into the pan - sauté for 10 minutes on high heat.

Sprinkle nutmeg powder and mace over the chicken, followed by pouring 1 cup of hot water into the pan and adding in cashew paste - cook for 15 minutes on medium heat; stir occasionally.

After 15 minutes, put in the dried plum, raisins, fried onion paste and hot water - stir everything together thoroughly.

Sprinkle green chilis on top - cook for another 15 minutes on low medium heat and remember to stir occasionally.

Drizzle one tablespoon of ghee into the rezala, as well as kewra water - stir well!

And finally, your delicious shahi chicken rezala is now ready to enjoy!
