Using two spoons, gently scrape the batter into the hot oil, making sure not to overcrowd the pan.
Fry the fritters until they are a nice golden brown, turning them occasionally to ensure even cooking.
Once golden brown, remove the fritters from the oil and place them on a tray to drain excess oil.
Prepare cinnamon sugar by mixing a teaspoon of cinnamon with sugar, adjusting to taste.
While the fritters are still warm, toss them in the cinnamon sugar to coat.
