Swiss Chard

Cultural Context

Originating from the Mediterranean region, Swiss chard has been cultivated since antiquity for its nutritious leaves and stems. In Swiss cuisine, it is often featured in hearty dishes, reflecting the country's agricultural heritage. Today, Swiss chard is embraced globally for its versatility and health benefits, appearing in salads, sautés, and as a filling in various recipes.

Servings4
1 lb swiss chard
2 tablespoons olive oil
3 cloves sliced garlic
1/2 cup sliced onion
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup chicken broth
1 tablespoon calabrian chili oil

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

Sort through the Swiss chard to remove any dirt and check the stems.

2

Chop the Swiss chard into nice big pieces and wash it in a big bowl of water, swishing it around to remove dirt.

3

Change the water and repeat the washing process three times.

4

Use a salad spinner to dry the Swiss chard, spinning until most of the water is removed.

5

Prepare sliced garlic and sliced onion, aiming for a size similar to the chard stems.

6

Heat a pan over medium heat and add olive oil to cover the bottom.

7

Add the sliced onion and garlic to the pan, seasoning with salt and pepper to taste.

8

Cook the onion and garlic until they start to soften and steam.

9

Add the Swiss chard to the pan, mixing it with the onion and garlic, and season with a little more salt.

10

Pour in about half a cup of chicken broth, mixing it in with the chard.

11

Cook until the chard wilts down and most of the liquid evaporates, adjusting salt and pepper as needed.

12

Turn off the heat and plate the cooked chard, noting the extra liquid that may remain.

13

Optionally, drizzle with calabrian chili oil for added heat.
