Guava Jam

4 cups white guava, peeled and chopped
1 cup brown sugar
2 cups granulated sugar
1/2 tsp cinnamon (optional)
1/4 tsp nutmeg (optional)
1/4 tsp salt (optional)
1/4 cup lemon juice
a few drops red food coloring (optional)

Wash the guava and cut them into pieces.

Preheat a pot on the stove to boil.

Once the guava is boiled and tender, turn off the heat.

Transfer the guava to a bowl and mash it with a potato masher until mostly mushy and smooth.

Strain the mashed guava through a strainer to remove most of the seeds.

For a quicker method, blend the guava to a smooth puree and then strain it again to remove the seeds.

Transfer the strained guava puree back into the pot.

Add the brown sugar, granulated sugar, spices (cinnamon and nutmeg), a pinch of salt, and lemon juice to the pot.

Stir the mixture until smooth and allow it to reduce and thicken.

Add two drops of red food coloring to achieve a pink guava color, stirring to combine.

Transfer the finished jam to a storing jar and let it cool, noting that it will thicken more as it cools.
