4 cups guava, peeled and chopped
1/4 cup water
1/2 tsp cinnamon (optional)
1/4 tsp ground cloves (optional)
2 bay leaves (optional)
2 cups granulated sugar
a few drops red food coloring (optional)

Wash the guavas thoroughly.

Remove the tops and bottoms of the guavas.

Cut the guavas in half, then cut them into quarters.

Place the guava pieces into a pot over medium heat with water.

Bring the water to a boil and boil the guavas until they are soft, about 10 minutes.

Optionally add spices, clove, and bay leaves while boiling.

Once boiling, the skin and pulp will change to a pale color.

After boiling, pour the contents into a sieve placed over a bowl.

Mash the guava in the sieve to extract the pulp, using a metal spoon for better pressure.

Discard the seeds after mashing the guava.

In a non-stick pan over medium flame, add 3 cups of guava puree and 2.5 cups of granulated sugar.

Bring the mixture to a boil and stir well until it starts to thicken.

Continue boiling and stirring until the mixture thickens further.

Add 2 drops of red food coloring for a more vibrant color (optional).

Once the desired thickness and color are achieved, remove from heat.

Prepare a mason jar in a container with ice cold water to cool the jam faster.

Pour the guava jam mixture into the mason jar to prevent cracking.

End up with approximately 1.25 mason jars of guava jam.

Store the jam in an airtight container in the refrigerator, countertop, or pantry.
