Cut purple, yellow, and Charlotte onions into small pieces.
Blend the onions, ginger, and garlic with 2 cups of warm water.
In a clean pot, add oxtail, goat meat, cow feet, and cow tripe.
Pour the blended seasoning over the meat in the pot.
Add oyster mushrooms and salt to taste, approximately 1 teaspoon.
Stir well to ensure the seasoning coats the meat evenly.
Steam the mixture on low heat for 25 minutes.
Clean the crabs thoroughly.
Remove the skin from the eggplants and cut them into pieces.
Boil the eggplants and tomatoes in water for about 10-15 minutes.
Clean the okra and set aside with the crabs.
After steaming, remove the cow tripe and cow feet to prevent overcooking.
Blend the boiled vegetables and add the broth from boiling them to the soup.
Add the blended vegetables to the pot with the meat.
If the soup is too thick, add more broth to thin it out.
Boil the tilapia for about 7 minutes with a sprinkle of salt.
Add the boiled tilapia to the soup along with the okra and crabs.
Add more scotch bonnet peppers if desired for extra heat.
Remove the tilapia after 2 minutes to prevent it from breaking apart in the soup.
Demonstrate how to make fufu by adding 3 cups of fufu flour to a pot.
Add water to the fufu flour and mix with hands until thickened, adjusting water as necessary.
