2

Gather ingredients: 6 mini sweet bell peppers, 1 red onion, 1 large tomato, 1 habanero hot pepper, 2 cloves garlic, 1 inch ginger, 2 large catfish, 1 large plantain, 1 large sweet potato, bay leaves, pepper soup spices, 1 teaspoon salt, 3 cups hot water, lime juice, fresh basil, 2 seasoning cubes, 4 cups water, and cameron pepper.

3

Clean the catfish by removing the skin and head, then soak in hot water with salt and lime juice.

4

Chop all vegetables: tomato, red onion, sweet bell peppers, garlic, ginger, and habanero pepper.

5

In a large pot, add the chopped tomato, red onion, sweet bell peppers, garlic, ginger, and habanero pepper.

6

Cook on low to medium heat, adding bay leaves and seasoning cubes.

7

Peel and chop the sweet potato and plantain, then add to the pot.

8

Add pepper soup spices and 1 teaspoon salt, then add 3 cups of water to cover the ingredients.

9

Cover the pot and cook for about 15 minutes until the plantain and sweet potatoes are cooked but not too tender.

10

Remove the sweet potato and plantain from the pot, set aside.

11

Blend the remaining mixture in the pot until smooth, creating a thick sauce.

12

Add about 4 cups of water to lighten the sauce, then mix in more fresh basil.

13

Taste and adjust seasoning, adding 2 more seasoning cubes if necessary.

14

Cover and bring the mixture to a boil.

15

Add cleaned catfish to the boiling mixture, and optionally add cameron pepper for extra spice.

16

Return the sweet potato and plantain to the pot.

17

Cook for another 15 minutes on medium heat until the catfish is cooked through.

18

Add sliced mini bell peppers for color and character.

19
