Soak the rice in water for about 30 minutes.

Drain the water through a strainer and let excess water drip off.

Heat a heavy bottomed pan over medium heat.

Add frozen vegetables and half a can of rinsed black beans.

Sprinkle lemon juice and cover the pan with a tight fitting lid.

Cook on very low heat for 12 minutes.

Uncover and gently loosen the rice with a fork or spatula.
