Prepare a salad with 1 large diced tomato, remaining diced bell pepper, diced red onion, and a little bit of cumin and salt.

Add olive oil and vinegar to the salad and toss well.

Let the salad sit in the refrigerator for 15 to 20 minutes while the beans and rice cook.

Once the rice is done, serve it on a plate, add the black beans on top, and then add the salad with its juices.
